Yellow Squash Stuffing

ingredients
  • Yellow squash (salted)

  • ¼ cup onion chopped

  • 1 can cream of chicken soup

  • 1 cup sour cream

  • 1 cup shredded carrots

  • 1 8 oz package herb season stuffing mix

  • ½ cup melted butter

directions

Cook squash, salt, and onion 5 mins. Drain. Combine soup and sour cream. Stir in carrots and fold in squash mixture. In separate bowl, combine stuffing and butter. Spread ½ stuffing mixture on bottom of 12 x7 ½ x 2 baking dish. Put veg mixture on top. Sprinkle remaining stuffing and butter. Bake 350º for 25 to 30 mins.
