Skillet Cornbread

1 cup all-purpose flour
¼ cup sugar
4 tsp baking powder
¾ tsp salt
1 cup yellow corn meal
1 egg
1 cup milk
¼ melted shortening or cooking oil
directions
Heat oven to 425º. Great an 8” square pan or 10” iron skillet.
Sift together flour, sugar, baking powder, and salt. Stir in corn meal. In a medium-sized bowl, lightly beat the egg with a fork. Stir milk and shortening into the egg. Add dry ingredients and stir to blend thoroughly just until smooth. (don’t stir too long!) Pour into a greased pan and bake for about 25 mins.
