Skillet Cornbread

ingredients
  • 1 cup all-purpose flour

  • ¼ cup sugar

  • 4 tsp baking powder

  • ¾ tsp salt

  • 1 cup yellow corn meal

  • 1 egg

  • 1 cup milk

  • ¼ melted shortening or cooking oil

directions
  • Heat oven to 425º. Great an 8” square pan or 10” iron skillet.

  • Sift together flour, sugar, baking powder, and salt. Stir in corn meal. In a medium-sized bowl, lightly beat the egg with a fork. Stir milk and shortening into the egg. Add dry ingredients and stir to blend thoroughly just until smooth. (don’t stir too long!) Pour into a greased pan and bake for about 25 mins.
