Peanut Butter Pie

ingredients
  • 1 baked 9” deep dish pie shell

  • ¾ cup creamy peanut butter

  • 1 ¼ cup confectioners sugar

  • ½ cup cornstarch

  • ⅔ cup plus 6 tbs sugar

  • ½ tsp salt

  • ¾ tsp vanilla

  • 2 cup scalded milk

  • 3 beaten egg yolks

  • 2 tbs butter

  • 3 egg whites

  • ½ tsp cream of tartar

  • Mix together confectioners sugar and peanut butter until it looks like a bisquick mix. Sprinkle ¾ of this mixture into bottom of baked pie shell. Reserve rest for top

  • For the filling: mix together the cornstarch, ⅔ cup sugar, salt, ¼ tsp vanilla, milk, egg yolks, and butter. Cook until it is of custard consistency. Remove from heat and let cool about 15 mins. Meanwhile, make meringue of the 3 egg whites, remaining ½ tsp vanilla, and 6 tbs sugar. Pour cooled custard over peanut butter mixture in pie shell. Spread meringue on top and sprinkle with remaining peanut butter/sugar mixture. Bake at 350º about 15 mins or until meringue looks golden brown.
