• 2 or 3 tbs of cooking oil

  • 2 medium onions (chopped)

  • 1 small green pepper of 1 cup celery (chopped)

  • 2 cans of tomatoes (undrained)

  • Salt

  • ¼ tsp pepper

  • ½ tsp sugar

  • 1 chopped datil pepper

  • 1 cup uncooked rice

  • 1 chicken cut up or 1–2 lbs of shrimp

Heat oil and saute onion, (pepper and celery) until tender. Add tomatoes and other seasonings. Bring all to a boil and let cook down on low for about ½ hour. Add a little water if necessary. Add chicken and rice and cook like a pot of rice.
