Chicken Pot Pie

ingredients
  • 2-3 cooked chicken cut up in small pieces or shredded

  • 1 can mixed vegetables with potatoes (Ukrops has a good one), drained

  • 1 can cream of Mushroom soup

  • 1 8 oz container sour cream

  • 1 stick of butter

  • 1 tsp sage

  • ½ tsp salt and ½ tsp pepper

  • 1 box Pillsbury or other brand pie crust (2, one for top and 1 for bottom)

  • ½ cup cut-up onion

directions
  • Melt butter in a saucepan or the microwave. Add onion and saute.

  • Place the bottom of the crust on a pie plate and smooth down.

  • Add chicken, mixed vegetables, sour cream, soup, sage, and salt and pepper to onion/butter mixture and mix well. Pour mixture into pie crust, smooth down, and place pie crust on top. Slit the top with a knife to allow it to breathe while cooking.

  • Cook for 30 mins at 350º with foil on top loosely, remove foil, and cook another 15-20 mins making sure the top crust does not get too brown.
