Chicken Enchiladas

ingredients
  • 10 flour tortillas

  • 4 boneless skinless chicken breast, cut in strips

  • 3 tbs olive oil

  • 3 cup monterey jack shredded cheese

  • ½ cup onion chopped

  • 1 4 oz cup green chiles

  • ¼ cup butter

  • ¼ cup flour

  • 2 cup chicken broth

  • 1 cup sour cream

directions
  • Saute chicken in olive oil until brown. Mix chicken, onion, and cheese in bowl. Spoon filling into tortillas. Roll and place in 9x13” pan with seam down

  • Over stove melt butter and stir in flour. Add broth. Cook until thick, stirring constantly. Stir in sour cream and green chiles. Spoon over tortillas. Bake at 350º for 20 mins
