Bread & Butter Pickles

ingredients
  • 25 to 30 cucumbers

  • 8 large white onions

  • 2 large bell peppers

  • ½ cup plain salt

  • 5 cups vinegar

  • 5 cups sugar

  • 2 tbs mustard seed

  • 1 tsp turmeric

  • ½ tsp pickling spices (add more if desired)

  • Wash and slice cucumbers as thin as possible, chop onions and peppers, and combine with cucumbers and salt. Let stand 3 hours. (put about 4 trays of ice on top of this) Drain after 3 hours.

  • Combine vinegar, sugar, and spices in a large pot and bring to a boil. Add drained cucumbers, heat thoroughly but do not boil. Pack while hot in sterile jars.
