Bread & Butter Pickles
ingredients
25 to 30 cucumbers
8 large white onions
2 large bell peppers
½ cup plain salt
5 cups vinegar
5 cups sugar
2 tbs mustard seed
1 tsp turmeric
½ tsp pickling spices (add more if desired)
directions
Wash and slice cucumbers as thin as possible, chop onions and peppers, and combine with cucumbers and salt. Let stand 3 hours. (put about 4 trays of ice on top of this) Drain after 3 hours.
Combine vinegar, sugar, and spices in a large pot and bring to a boil. Add drained cucumbers, heat thoroughly but do not boil. Pack while hot in sterile jars.
